Ingredients
  

For the Cake:

  • 2 ½ cups all-purpose flour sifted
  • 1 ½ cups granulated sugar
  • 1 cup fresh strawberry puree ~1 ½ cups whole strawberries
  • ½ cup unsalted butter softened (or vegetable oil)
  • 3 large eggs room temperature
  • 1 cup whole milk or buttermilk
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt

For the Frosting:

  • 1 ½ cups unsalted butter softened
  • 4 cups powdered sugar
  • ½ cup strained strawberry puree
  • 1 tsp vanilla extract
  • Pinch of salt

Optional:

  • Fresh strawberry slices for garnish
  • White chocolate chips

Instructions
 

Step 1: Prep Strawberry Puree

  • Blend 1 ½ cups fresh strawberries into a smooth puree (yields ~1 cup).
  • Reserve ½ cup (strained) for frosting.

Step 2: Mix Dry Ingredients

  • Whisk together flour, sugar, baking powder, and salt in a bowl.

Step 3: Combine Wet Ingredients

  • Beat butter until creamy. Add eggs one at a time.
  • Mix in strawberry puree and vanilla.
  • Alternate adding dry ingredients and milk, starting and ending with flour.

Step 4: Bake

  • Pour batter into greased 9-inch pans.
  • Bake at 350°F (175°C) for 25-30 minutes (toothpick test). Cool completely.

Step 5: Frosting

  • Beat butter until fluffy. Gradually add powdered sugar.
  • Mix in strawberry puree, vanilla, and salt. Frost cooled cake and decorate.
